Creamy Lemon CupsCreamy Lemon Cups

Makes 8 servings

Ingredients:

1 3-ounce package sugar-free lemon gelatin
2 tablespoons fresh lemon juice
1 cup water
8 ounces “light” cream cheese
8 ounces part-skim ricotta cheese

Topping:
1 tblsp unsweetened toasted coconut or toasted chopped  nuts



Method:

  1. In a large bowl, stir together the gelatin, lemon juice and water until thoroughly mixed. Add cream cheese and ricotta. Carefully blend cheeses with gelatin using a mixer on low speed to prevent splattering.
  2. Pour the creamy mixture into eight individual dessert bowls or into a shallow serving container.
  3. Refrigerate mixture until it is set. Before serving, sprinkle with the toasted coconut or nuts.

Variation: Pour lemon mixture over a crust made with ground nuts and unsweetened coconut or a traditional graham cracker crust.
